2 sticks of butter
1/3 cup plus 1 tbsp granulated sugar
1/3 cup ground almonds
2 tsp almond flavoring
1 1/2 cups plus 2 tsp unbleached flour
Beat butter together with sugar. Add almonds and flavoring. Add 1/3 of flour and beat. Fold rest of flour by hand. Chill 1 hour or longer. On a floured board, roll out finger width 12 inch long rolls. Cut into 1 1/2 inch pieces. Place on a cookie sheet. Whip an egg white with a fork. Brush the top only of each cookie and sprinkle with 1/4 cup pearl sugar and 1/4 cup coarse sugar and 1/4 cup ground almonds (all mixed together). Bake at 325 degrees for 25 minutes or until light golden.
